A fine sake with a full and rich aroma. This Tokubetsu Junmai sake is made by slow and low temperature fermentation of carefully selected locally-grown Saitama rice polished to 60%. The use of a special local yeast strain called Sai no Kuni also adds to the sake profile's intensity and unique character. Saitama Prefecture is also known as the GTA, or Greater Tokyo Area.
